Why Does It Taste So Good?
How Proton Freezing Works
Traditional freezing methods often damage food by expanding water molecules, which rupture cells.
Proton Freezing uses magnetic and electromagnetic waves to align water molecules,
then freezes them rapidly, locking in the food’s flavor and texture.

FAQ
Frequently Asked Questions
- 1 Can Proton freeze any type of food?
- Proton can achieve high reproducibility in freezing a wide range of products, including fresh fish, shellfish, crustaceans, seaweed, and meat. It can also effectively freeze processed meats, rice dishes, side dishes, noodles, soups, bread, and desserts. However, complete reproduction of vegetables and fruits is not possible, but their use in frozen form or as purees can enhance reproducibility through different processing methods.
- 2 Can I cook with ingredients that have been frozen using Proton and refreeze them with Proton afterward?
- Yes, it is possible.
- 3 When is the Proton freezing process considered complete?
- The Proton freezing process is complete when the center temperature of the food reaches -18°C.
- 4How should I store the ingredients after Proton freezing?
- Please store them in a freezer at temperatures below -18°C. Avoid temperature fluctuations during storage.
- 5 What daily maintenance is required?
- The Proton freezer allows for direct freezing of ingredients. Therefore, after use, it is necessary to clean the interior with neutral detergent and perform defrosting and drying of the cooling system to keep it hygienic.
- 6 Can it be used continuously for long periods?
- Continuous use for more than eight hours a day is not recommended due to frost build-up on the heat exchanger, which can weaken the cooling effect.
- 7 Is a defroster necessary?
- It is not mandatory, but it is recommended if defrosting is part of the process. For instance, sushi, when thawed naturally, will only reach around 20°C and remain cool. However, using a defroster allows it to be thawed at 35-40°C, providing a freshly prepared sensation.
- 8 What are the running costs?
- The electricity cost is approximately 2 yen per kilogram of freezing capacity. For the PF-15B, with a freezing capacity of 15 kg per hour, the electricity cost is about 30 yen per hour.
- 9 What consumables are required?
- 1.Door gaskets 2.Bearings in the blower section → Recommended to be replaced every 6 years as per manufacturer lifespan 3.Air intake filter (for PF-15B) → Depending on the environment, it can be washed and reused. If replacement is needed, please use genuine parts.4.Water softener filter for the defroster → Cycle varies based on environmental conditions.
- 10 What is the shelf life of food frozen with Proton?
- The storage period after Proton freezing varies based on the type of ingredients, products, packaging, and storage conditions. For detailed storage methods, please contact our staff.
